Hi, it’s Róisín here. I have been looking after Nutricia’s low protein food range and social media for the past 15 months. Sadly, my time with Nutricia has come to an end. I have decided to take on a new adventure of going backpacking around South America for the next 12 months.

I have absolutely loved working with Nutricia Metabolics. Showing people that low protein food can look and taste good has been very rewarding and I have met lots of inspirational families along the way at our low protein events. The feature recipes this month are two of my favourites and I hope you enjoy them too!  Roasted Butternut Squash & Caramelised Red Onion Lasagne and Roasted Red Pepper and Rosemary Omelette – Now they’re celebrations of food!

But my low protein journey isn’t ending here. I am planning on keeping you up-to-date with my travels and letting you know if I stumble across any low protein foods and ideas while adventuring through Latin America. Keep an eye out for pictures and posts in the coming months.
